Preparation Time: 10 minutes
Baking Time: 22 -24
Makes 10 medium muffins
What you need:
- 1 2/3 Cup flour
- ½ Cup brown sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 2 large bananas mashed
- 1/3 Cup Apple juice
- 1 teaspoon Lemon Juice
- zest of one lemon (chopped)
- 1/8 Cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 Cup Lavender Buds
What you do:
1. Preheat oven to 375oF.
2. In a large bowl, mix together dry ingredients.
3. In a separate bowl, mix together bananas, juices, oil, vanilla extract and lavender.
4. Add the wet mixture to dry ingredients and mix until just moist.
5. Spray muffin tins, and fill ¾ full.
6. Bake for 22-24 minutes.
7. Let stand 4 minutes before turning onto a cooling rack.

Real lavender buds? Wow! I love that idea but truly, I am novice in the area of cooking with flowers…really? Grin….the recipe looks divine!!!!!!

Hi Trish novice??? I have looked at your blog so I don’t think so!!! Yes I picked the lavender in our yard and stripped the buds from the stems. Takes a bit of time but not at all a hard job. Very calming actually!
I hope you will give them a try Trish, they taste yummy and the smell is divine.

grin…love the tongue in cheek….calming. Well, I shall have to scout the neighborhood for lavender….mine saw an untimely demise several years ago with my yard falling to the creek below in those heavy lower mainland rains….sigh. But….I am thinking these muffins will be soooooo good it will be worth chatting up the neighbors for a wee harvest.
Uhm..the blog thing…grin…I am just an experimenter…truly. But what fun!!! and I love your little blog here…fun to come and visit from time time…almost as if I am escaping to the island itself. Perhaps once I scoot the young son off to University in a week I will look at booking some me time at island B&B’s….ta…have a great weekend.

Well my dear, I did give these a try and they were indeed delicious. I managed to track down a few lavender buds through a friend here in the Lower Mainland who is a herbalist…but she would not spare me many grin, so enough for six muffins and we were off to the ‘races’. Very good, very unique. I like your style!

So happy you enjoyed them Trish. Now you can set your friend up with a dozen or so in exchange for more lavender.
The lavender is also a nice addition to cakes and also in gravy served with Salt Spring Island Lamb.
Put a few in the sugar bowl. It is great to watch people react to the little purple buds and the wonderful scent of lavender in their tea.
