I call this Grandpa’s Granola because Grandpa says he can eat anything. Now as a family we smile knowingly as Grandma never cooked anything that Grandpa didn’t like. And 92 who is going to argue with him?

I recommend you serve this with heavenly banana.

What you need:

  • 10 cups Rolled Oats (not quick)
  • 1 ½ cups Oat Bran
  • 1 ½ cups raw Wheat Germ
  • ½ cup ground Flax Seed
  • 1 cup brown sugar
  • 3 cups mixed unsalted nuts and seeds ( I use trail mix)
  • ¾ cup vegetable oil
  • 1 cup honey
  • 4 teaspoons Vanilla
  • 2 cups mixed dried fruits (your choice)

What you do:
1. Preheat oven to 350oF.

2. Thoroughly mix first five ingredients in a very large bowl.

3. In a saucepan heat oil, honey and vanilla until it bubbles. Pour into the Oat mix and stir thoroughly.

4. Add the nuts and seeds and continue to stir until it is well mixed.

5. Spread out on two large baking sheets (with sides).

6. Bake for ten minutes, turn granola in to the center then spread it out again.  Do this two or three times until the Granola is turning a golden brown and looks dry. CAUTION: Watch closely during the last ten minutes so it doesn’t burn.

7. Remove from oven and continue to stir (so it doesn’t clump) until it cools.

8. When cooled add the dried fruits and mix thoroughly. Store in a sealed container.

Although this particular cheesecake was made as dessert for an engagement celebration, I would use it as a breakfast dish topped with Lemon Yogurt, Granola, Blueberries, and garnished with Mint leaves.

Blueberry Lemon Cheesecake Crust:

  • 1 ½ cups ground Pecans
  • ¼ cup butter/margarine
  • ½ tsp. Cinnamon
  • 3 Tablespoons Sugar

What you do:

1. In a small bowl, combine ingredients.
2. Press into 9″ spring form pan and bake @ 350oF for 10 minutes.

Blueberry Lemon Cheesecake Filling:

What you need:

  • 3 – 250 grams/8 oz. pkg. Cream Cheese at room temperature
  • ¾ cup Sugar
  • ½ tsp. Vanilla
  • 1 tsp. Lemon zest
  • 3 large Eggs
  • 2 cups Blueberries fresh
  • 1/3 cup Blueberry Jam

What you do:

1. (While the crust is in the oven) In a large bowl, beat cream cheese until smooth.
2. Gradually beat in sugar, vanilla, lemon and eggs – one at a time.
3. Scrape sides of the bowl between each addition.
4. After the mixture is well blended gently fold in Blueberries.
5. Pour into spring form pan.
6. Place teaspoons of Blueberry Jam on top of mix and pull through batter with a knife.
7. Bake for 50 – 60 minutes at 350oF or until center barely jiggles when the pan is gently tapped.  Cool to room temperature.
8. Refrigerate for several hours before removing from pan.

Top with Blueberry Coulis and Blueberries. Garnish with mint.

Blueberry Coulis

  • 2 cups Blueberries
  • 1 cup Sugar
  • 1 tsp. Lemon Juice

1. In a small pot, bring ingredients to a gentle boil, cook until Blueberries pop.
2. Put through a blender then a sieve.
3. Cool.

And now, this delicious recipe.  Using our Best Basic Crepe Recipe we’ve created a very special recipe. These crepes were an absolute hit at breakfast this morning and our guests said they’d happily act as testers on any future recipes too!!

Anne's Apple Cheese Crepes Recipe

Makes 8-12 Crepes

What You Need:

Filling:

  • 6 Tablespoons unsalted Butter, melted
  • 6 Tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/8 cup water
  • 6 apples – peeled, cored and thinly sliced
  • ½ cup coarsely chopped walnuts, warmed

  • 1/3 cup light cream cheese, room temperature
  • 1/3 cup goat cheese, room temperature

Sauce:

  • 6 Tablespoons Maple Syrup
  • 12 Tablespoons Whipped Cream

Garnish:

  • ¼ cup walnuts

  • Mint leaves
  • Fresh thin Apple slices

What You Do:

1. Place first five filling ingredients in a fry pan. Cover and simmer for 4-6 minutes until apples are tender.
2. Remove from heat and add warmed chopped walnuts to the apple mix.
3. Blend two cheeses together.
4. Spread a small amount on each crepe.
5. Spread cooked Apple mix on top of cheese on each crepe.

6. Roll and plate.
7. Drizzle on sauce.
8. Add garnish and serve warm.

Fathers Day Breakfast PizzaSimple yet satisfying – this recipe for a breakfast pizza is definitely a Dad pleaser!

What you need:

  • 4 Flat 8″ Soft Tacos
  • 3/4 cup Tomato Sauce
  • 2 Chirozo or Chicken Turkey Sausage – thinly sliced
  • 2 cups Frozen shredded Hash Browns
  • ½ – 1 cup Green Onions – chopped
  • 4 Eggs – beaten
  • 2 cups Grated Mozza & Cheddar Cheese
  • Chili Pepper Seeds (optional)

What you do:

1. Preheat oven to 375oF.
2. Lay out soft Tacos flat on parchment paper.
3. Spread tomato sauce liberally over the soft taco shells.
4. Evenly layer sausages and potatoes on sauce.
5. Pour egg evenly over potatoes.
6. Sprinkle cheeses on top – trying to cover the potato and egg mixture evenly.
7. Bake at 375oF for about 25 minutes until egg is cooked and cheese is bubbling.

Serves  4.

Me, Dad and Mom in Spain

Well…Father’s Day is just around the corner … June 21st to be exact! And, my Mom has been busy in the kitchen creating an extra special brunch menu for the Dad’s in our lives.

Today, I am going to give you the menu and over the next few week’s we’ll be sending out all of the recipes to our Breakfast with the Broad’s newsletter readers AND posting a few of them here too!

I don’t want to spoil the surprises in store for you with this menu, but I have to say that there are some amazing treats featured in this brunch menu. There’s something to please every man, woman and child!

What you need:

  • 9 slices cubed white bread with crusts removed

  • 1 ½ cups aged Cheddar Cheese, grated
  • 6 eggs, beaten
  • 2 ¼ cups half n half cream
  • 2 teaspoons Dijon Mustard
  • 3 drops of hot sauce
  • 6 Tablespoons Green Onions, chopped

What you do:

1. Preheat oven to 450oF

2. Butter 9 x 9″ square pan or six ramekins

3. Layer bread and cheese, bread and cheese.

4. In a large bowl, mix remaining five ingredients.

5. Pour over bread and cheese.

6. Cover and refrigerate overnight.

7. Bake at 450oF for 35 – 50 minutes, depending on whether a pan or ramekins.

8. Remove from oven. Leave to set for five minutes.

9. Sprinkle with cheese and serve.

10. Serve with Turkey Chicken Sausage or ham slices.

What you need:

Ingredients for the Chocolate Cheesecake Muffins

  • 1 Cup of Sugar
  • 1 ½ cups Flour
  • ¼ cup Cocoa Powder
  • 1 Tablespoon Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Buttermilk
  • 2 Eggs
  • ½ cup Oil
  • 1 teaspoon Balsamic Vinegar
  • 1 teaspoon Vanilla

Topping

  • 8 oz. Cream Cheese, softened
  • 1 beaten Egg
  • ½ teaspoon Vanilla
  • ¾ cup Chocolate Chips

What you do:

1. In a large bowl mix dry ingredients together
2. In a different bowl, mix the wet ingredients together.
3. Finally, in yet another bowl, mix topping ingredients together.
4. Preheat oven to 350oF
5. Grease or spray 12 large muffin cups.
6. Mix wet ingredients into dry and stir to moisten
7. Spoon into muffin tins – filling ½ to 2/3 full.

10. Remove and cool on rack.

What you need:

  • 2 Cups Orange Juice
  • 1 small Banana
  • 1 Tablespoon Agave Syrup
  • ½ cup French Vanilla Yogurt

What you do:

1. Put all ingredients in blender and blend until smooth.
2. Serve in tall glasses with orange slice and/or garnish.

This recipe was inspired by ‘Breakfast Crunch’ in Do Breakfast by Jane Donovan

What you need:

  • ¼ cup Pumpkin Seeds
  • ¼ cup Sunflower Seeds
  • ¼ cup Sesame Seeds
  • 2 Oranges + zest
  • 2 Tblsp. Brown Surgar
  • ½ cup dried Figs, chopped
  • 2 large Bananas
  • 2 ½ cups French Vanilla Yogurt

What you do:

  1. In a dry skillet on medium heat, roast Pumpkin Seeds and Sunflower Seeds for three minutes stirring constantly.  seedy-breakfast-crunch-1
  2. Add Sesame Seeds and cook for another couple of minutes stirring until they are all evenly browned. Cool.
  3. Stir chopped figs, brown sugar and the zest of one orange in a skillet and cook for two minutes. Cool. (Zest of second orange is for garnish.)seedy-breakfast-crunch-2
  4. Remove white pith from the oranges and cut into bite size pieces.
  5. Slice bananas and gently toss with oranges, add yogurt and gently combine.seedy-breakfast-crunch-3
  6. Divide into four dishes, top with the fig mixture then the seed mixture, and then decorate with the rind.
